Princess Frittata

Maleeha of Iowa is one of my dance/life heroes. A protegé of Ibrahim (Bobby) Farrah, Maleeha is the real deal and a kick in the pants to boot, and I’m really fortunate that I’ve had opportunities in my life to study with her. This Princess Frittata was created in her honor, and in honor of the amazing dancer Fritha Coltrain, on whom Maleeha bestowed the charming nickname “Princess Frittata.” Sending my love, and a sassy roll of my hyper-rörlig höfter.

15 min active, 40 min total | 4 servings

1 large yellow finn potato, peeled and thinly sliced

2 tbsp olive oil

1 leek, halved and sliced, white part only

1 bunch baby asparagus, about 1 lb, cut into 1 inch pieces

2 tbsp capers, drained

6 eggs

½ cup lowfat milk

½ cup goat cheese, crumbled

1 tbsp fresh dill, chopped + sprigs for garnish

1 tbsp fresh parsley, chopped

½ tsp finely grated lemon zest

salt and pepper

 

Move a rack in the oven to the top position and heat broiler.

Fill a medium saucepan with water, add 1 tsp salt, and bring to a boil.  Add potato slices and cook until tender, about 10 minutes.

Meanwhile, heat 1 tbsp olive oil over medium high heat in a10 inch ovenproof skillet and add leek and asparagus.  Season with ¼ tsp each salt and pepper. Cook until tender, about 10 minutes.  Add capers and cook 2 more minutes.  Remove skillet from heat and place mixture in a bowl.

While the vegetables are cooking, whisk eggs and milk.  Add goat cheese, dill, parsley, lemon juice and ¼ tsp each salt and pepper.  Whisk to combine.

To assemble, return skillet to stove on medium low heat and add remaining tbsp olive oil. Place potato slices in pan, cover with vegetable mixture, then pour egg mixture over the top. Cook slowly over medium low heat until bottom of frittata solidifies and begins to turn golden, about 12 minutes.

Place skillet under broiler. Cook until top of frittata is firm and beginning to turn golden, about 5 minutes.  Slice frittata into quarters and serve garnished with fresh dill.

 

Tip: If leftover roasted potatoes are available, slice and use in place of the parboiled potatoes.
